CLASS DESCRIPTION

Cooking classes are based on planning and preparing complete meals, inspired by classic and unusual favorites of Umbria and the bordering Tuscany. We will build a base of flavorful pastas, main courses, sides and salads and discuss how to select the ingredients, and time the cooking. We will also uncover the mysteries of basic skills such as chopping, searing, braising, and roasting.

Along with cooking and eating, the week includes a full day wine tour of the Montepulciano region,walking tours of Assisi, Gubbio or Perugia, an escort to Deruta and Cortona, and a trip to the open market of Umbertide, and an olive oil tasting and dinner with the Scarpaccini family at Villa La Macchia.

Throughout the week, there will be opportunities for free time to take advantage of some of the best Italy has to offer. A good book by the fire or on the terrace, the masterpieces of Florence, or famous designer outlets of Gucci and Prada, all nearby attractions.
